Nutty Chocolate Pudding... a simple and satisfying treat

Ever need a sweet treat after dinner?

Contrary to popular belief, you can actually make really easy, really nutritious, and incredibly delicious desserts to satisfy that sweet craving.

Here is one I love not only because it’s sweet, creamy, chocolate-y, and nutty but the ingredients are powerful.

  • Free of added sweetener

  • Monounsaturated fats found in avocado and nuts support good cholesterol and lowers bad cholesterol

  • Flavonols found in chocolate (think dark/unsweetened/raw, not Hershey’s) may reduce severity of age-related cognitive decline

  • Avocado and cacao are very high in antioxidants (absorbs free radicals in the body)

  • Raw organic cacao is a superfood because it's antioxidant potency, high amount of iron, magnesium for a healthy heart and brain, high amount of calcium, and is a natural mood elevator and anti-depressant.

Nutty Chocolate Pudding

Serves 4, 5 minutes

  • 1 avocado

  • 4 tbsp cacao or cocoa powder

  • 2 bananas (fresh or frozen)

  • 4 tbsp almond butter or nut butter of choice (I used unsweetened peanut butter)

  • 1/2 cup full-fat coconut milk

Place all ingredients in a blender until smooth. Place into a small dish, top with cacao nibs and nut butter!

Store extras in an airtight container in the refrigerator for 3-5 days.
