Fennel + Apple Salad


Serves 3 - 4, 5 minutes


  • 5 cups organic arugula

  • 1 organic fuji or gala apple, thinly sliced

  • 1 large bulb fennel, thinly sliced

  • 1/4 cup hemp hearts

  • 2 tbsp tahini

  • 3 tbsp extra virgin olive oil or avocado oil

  • 1/4 tsp sea salt

  • 1/2 lemon juiced

  • 1 tbsp Dijon mustard

  • 3 tbsp red wine vinegar


  1. Wash and slice apple and fennel

  2. Toss apple, fennel, hemp hearts and arugula in a large dish.

  3. Place all remaining ingredients in small dish, whisk together until combined.

  4. When ready to eat, pour dressing over salad.

  5. Serve immediately. Top with light protein like grilled chicken, fish or tofu. The options are endless!

Keep refrigerated in airtight containers for 2-3 days.

If you are prepping this for lunch, wait to pour dressing until ready to eat to prevent arugula from getting soggy.
